Broccoli Cheddar Soup

Broccoli Cheddar Soup
Servings: 4
Ingredients:
-1/2 cup Vegtago's Dynamic Dill Cheddar Cheeze
- Medium yellow onion – chopped
- 2 cups Vegetable Broth
- 2 cups coconut milk
- 1 Large Broccoli Head
- 1 Large Carrot – shredded
- 3 tbsp Rice Flour
- 2 Cloves Garlic -minced
- 1 tbsp Vegan Butter
- ¼ tsp Paprika
- ¼ tsp Turmeric
Salt and Pepper to taste
Instructions:
- In a large pot, when heated, add vegan butter. When melted add onion and sprinkle small amount of salt. Then add garlic, fry for till onions are caramelized.
- Add broth, rice flour. Then whisk thoroughly. Add vegetables and seasoning, bring to a boil. When boiled reduce the heat to low for 20 minutes.
- Add coconut cream, and Vegtago’s Vegan Cheddar Cheeze and simmer for up to 20 minutes.
