Summer Lovin’ Eggplant Patty

1 Large Eggplants

1 cup Gluten-free Breadcrumbs

½ cup Plant-based Mayo

6 Cloves Garlic

2 tbsp Fresh Basil

1 tbsp Oregano

2 tbsp Flaxseed

Vegtago’s Dynamic Dill Cheddar Cheeze

Salt and Pepper to taste

Olive Oil

Plant-based Butter



  1. Chop eggplants into 1 inch pieces then lay the eggplant pieces onto baking pan. Spread olive oil on each piece and sprinkle a small amount of salt
  2. Place trays into oven, and bake for 10 minutes on 375F
  3. When completed, transfer the cooked eggplant into a food processor and add the remaining ingredients. Blend for up to 5 minutes, make sure to not over blend as the texture adds to the burger
  4. When blended, form mixture into patties and add them back onto the pan. Bake for 15 minutes on 375F
  5. In a frying pan on medium heat, add plant-based butter. When heated fry patties for about 5 minutes on each side
  6. Spread Vegtago’s Dynamic Dill Cheddar Cheeze, add your favourite burger tops and enjoy!
